Debanna Farms in Sprucedale


Another addition to the list of SAVOUR Muskoka members! Debanna Farms is a small home-based business located in the heart of Sprucedale on Hwy 518 West. They provide natural fed, free range chicken, turkey, pork, goat meat, and occasionally beef as well. Also offered are in season vegetables and homemade preserves. All of their meats, preserves, and vegetables are grown at Debanna Farms.

They are breeders of Boer meat goats and provide the public with meat, breeder goats, or a lovely pet for your family. Let's not forget farm fresh eggs for your morning breakfast! A lovely, refreshing store is also available to browse through for feed, tack, and supplies.

Morley Stephen took over the business for his father and now he and his son, Richard, run the family business together. Maple Rum Banana Crepes


A simple way to make a delightful dessert that is sure to impress your guests.

Crepe Batter

½ Cup Flour
1 Beaten Egg
1 Cup of Milk
Pinch of Salt
1 tsp. sugar
1 tsp. vegetable oil

Add flour to milk and egg mixture and whisk gradually. Whisk in remaining ingredients and let stand for one hour before using.

In a hot greased pan pour 1.5 oz of batter and swirl around until pan is thinly coated. Turn after approximately one minute and cook reverse for ½ minute. Turn onto a plate. Repeat until batter is used. (Approximately 6 crepes).

Finale

2 Bananas
2 oz Muskoka Maple Syrup
1 oz White Rum
1 tbsp. Butter
1 Cup Fresh Muskoka Berries

Method

Peel bananas and remove any access pulp.
Place ½ a banana which has been sliced lengthways onto a crepe and wrap tightly
Trim edges of crepe and cut in half.
Repeat using 4 crepes
Boil maple syrup in a medium pan and remove from heat.
Add rum being cautious to avoid any open flame.
Return to the heat and warm through for one minute.
Whisk in butter and carefully add crepes to sauce.
Gently heat for ½ minute carefully remove and present on warm plates
Garnish with fresh berries and your favorite ice cream

SAVOUR Muskoka is excited to introduce one of our newest members.  Located in Emsdale, Seed to Green Farms specializes in organic micro greens, baby greens and wheatgrass. Seed to Green Farms believes that micro greens accentuates and deepens our connection with nature especially when included in our diet. From their pure aquifer water to organic soil, Seed to Green grows and harvests all products with care and our planet in mind.

Muskoka Beer Festival is Calling You


The weeks are going by quickly and the Griffin Gastropub is working hard with the preparations for their third annual festival. The 2011 Muskoka Beer Festival this year will be on Saturday, August 27th at Annie Williams Park in Bracebridge from Noon to 8:00 pm.

Keeping the focus on local, there will be over 20 craft breweries serving more than 75 different beers. The festival’s first year took in 700 paying customers. Last year that number almost doubled. The Griffin Pub is aspiring to have 2000 paying customers attend this year’s event!

Southwell Horsemanship Centre


Southwell Horsemanship Centre is located in the majestic Rosseau countryside. Holly Southwell teaches English riding and horsemanship year-round nearly every day. The centre also raises warmblood horses and frequently have a variety of horses for sale.

John Dixon and Holly Southwell have owned and operated Sweetgrass Farm, since 1996. The farm keeps John and Holly busy year-round, producing organic produce, wild rice, and maple syrup (among other things). In experimenting with winter gardening, Sweetgrass Farm has had amazing winter success for 7 years, with John and Holly harvesting winter greens in their unheated greenhouse approximately twice a week until June. When not busy with production, John and Holly have a variety of other activities on the go, including regular farm maintenance and upgrading.

Trillium Resort & Spa uses fresh, local ingredients to offer savoury foods to their guests. Get an early taste by trying one of their recipes on your own!

SMOKED TROUT PASTA
1 large shallot
3 cloves of crushed garlic
1/2 tsp black pepper
1 tsp salt
1/3 of a Milford Bay smoked trout
3 pieces of asparagus cut in half
1/2 cup of pasta
3 tbsp horseradish
1/2 cup of 35% cream
1/4 cup of good parmigiano sane cheese
3 chives

First add your pasta to your boiling salted water. In a separate pan sweat off the shallots, garlic, and then add chopped asparagus (pre chop asparagus in to 3 pieces each).
The sauce, add the horse radish & cream, let it thicken a bit. While thickening, check your pasta when it is ready to your liking, add it with a bit of the pasta water so it is not to sticky then last minute add the Milford Bay smoked trout. Finally top with good parmigiano cheese and 3 chives.

Enjoy with a view of the lake and a full bodied white wine, like a Oregon or Australia Chardonnay.

Baysville Farmers' Market is a great place to go on your Friday afternoon, and to visit some of SAVOUR Muskoka's members. Start off your weekend with fresh produce, meats, and goodies you just purchased at the Baysville market!

The market is in its 10th season! It runs from July 1st to September 2nd from 2:00 to 6:00 pm on Friday afternoons at the arena parking lot on University Street.

After two successful summers touring Muskoka's farmer’s markets, the positive response to Sabine’s products was overwhelming. Member of the Ontario and the Muskoka/Parry Sound Beekeepers’ Association, Jim Smith has been working in apiculture for over twenty years. Smith has 32 hives in eight bee yards strategically located throughout the hills of Raymond, Windermere and Ullswater so that bees have easy access to wild flowers all season long. Lavendar, lilac, wild apple and cherry blossoms enhance the flavours in Poppa Jim's honey. Pure and creamed wildflower honey along with honey comb is available year round. The Smiths also gather wax to make a variety of clean-burning decorative candles. Jim Smith also has an education hive that he can bring to resorts and other locations to show visitors how honey is made.

Muskoka's Cranberry Trails

The Cranberry Trails at Johnston’s Cranberry Marsh offer a wonderful Muskoka experience around the cranberry marshes for any time of the year whether you want to go hiking, biking, snowshoeing, cross-country skiing, or snowmobiling. Pets are allowed on leashes as well. The trails are free to roam, all you have to do is check in at the Cranberry Store first. View the trail brochure for a map and trail details. Length of trails vary from 1.0 km to 5.0 km. There are three self-guided tours and three geocaches for your enjoyment.

Farm-to-Table with Becky Lennerton

Started four years ago, Rebekah Lennerton created the Black River Food Company in the small town of Washago with the "Farm-to-Table" philosophy. The company specializes in social and corporate catering, prepared soups, sauces, and entrees, as well as culinary classes.

A variety of Black River Food’s products use locally grown organics and farm raised game such as elk, bison, and red deer. These products are featured at the Gravenhurst Farmers’ market, Tastebuds in Gravenhurst, and at Stephen’s Butchers in Port Carling. You can keep an eye out for Black River Food Co. at the Mariposa Folk Festival in July and the Bala Cranberry Festival in October. All meals are made in their own kitchen with pure, fresh, natural ingredients. Products used are from local farmers' markets, apiaries, and specialty farms - ensuring local promotion and seasonal freshness. All meats are pasture raised, provincially inspected, and sourced from Muskoka Meats and other local butchers. Items are prepared in small batch sizes so everything is done by hand. Shiitake Mushrooms a Popular Choice

Muskoka is flourishing with oak trees and it makes for the perfect location for shiitake (Japanese for oak) mushrooms. Windy Acres Farm supplies select stores, resorts and restaurants with Shiitake Mushrooms. Mushrooms are all organic, grown on hardwood logs [the same way as the 600 year Japanese traditions] making for a much enhanced flavour as compared to the conventional shiitake grown year round on sawdust.

Season is from mid June till start of November. Farm sales by advance order, preferably 10 days as all logs are fruited on a timed cycle with weekly markets and chef demand. Products sold include mushroom caps, whole mushrooms, dried mushrooms, and dried mushroom extract used year round. A small greenhouse adds fresh, natural grown produce; mostly varieties of cherry tomatoes. Look for WINDY ACRES at local farmers’ markets!

Since 1876, Brooklands farm has supported six generations of the Riley Family. Wetlands, forests, fields, streams, and heritage buildings are all part of what makes Brooklands Farm a spectacular Muskoka farm and the perfect location for SAVOUR Muskoka’s Field-to-Fork Tasting Event.

Brooklands Farm offers a vast selection of produce from their own maple syrup to vegetables and berries. Visitors are welcome to come pick their own berries and vegetables during the growing season. Produce is grown with sustainable farming methods and they rely on improving soil health rather than chemicals.

Holiday BBQ at Arowhon Pines Resort

Arowhon Pines Resort is nestled in picturesque Algonquin Park and will be hosting a “100 Mile Challenge” barbecue on Monday, August 1st from 12:30 to 3:00 pm at $32.00 per person. With the 100 mile concept, food being served will have been grown from within a 100 mile radius of Arowhon Pines. This is a challenge to promote the creation and execution of a local diet. The 100 mile idea raises awareness about the environmentally and economically friendly benefits of eating locally produced food. Not to mention, it is absolutely delicious!

With hopes of this becoming an annual custom, Arowhon Pines is thrilled to be organizing the 100 mile barbeque. Chef David Cooke of Arowhon Pines has been working vigorously over the past 10 years to use local produce and meat suppliers from the region. Some of their partners include Brooklands Farm, Pork of Yore in the Ottawa Valley, Kawartha Diary, Grenville Farms, Sprucedale Meats, and Four Season Greens.

Muskoka Meats’ Workshop Series

You are invited to Muskoka Meats and the 100 Mile Store for their workshop series that is currently running until the beginning of October 2011.

Located on Hwy 11 North, Muskoka Meats is excited to offer Muskoka its first 100 mile store. Muskoka Meats is now home to a significantly larger facility, and has expanded to include a whole series of natural, local products. To combine the efforts of the farmers, chefs, and processors just “made sense” to owner David Purdon.

A full-service solution, Muskoka Meats aims to supply and produce the best meats possible, using the finest ingredients available. Also joining Muskoka Meats is Chef Becky Lennerton from Black River Food Company and Ron and Bonnie Karson of All Fired Up in Muskoka.

The 100 Mile Store offers meat, produce, preserves, fruit, honey, maple syrup, gourmet soups, salads, pulled pork and campfire baked beans, arts, crafts and perennial plants, wood-fire bagels, flatbreads, and pizza all produced within a 100 mile radius.
